Taco Waffles... Fiesta in Your Mouth

Some may think that these waffle recipes we're making are "weird" but trust me, they're delicious! These are tried and tested, and would we put a gross recipe up here? I don't think so! The key with the waffles is mixing in a lot of spices and stuff into the batter so it doesn't have the strong waffle taste. If you don't believe us... you'll just have to try it!

Mexican is one of our favorite food groups, whenever we go out it's most often to a Mexican restaurant. We got thinking of what we could do with these waffles and we instantly thought of TACOS! I mean how could you go wrong with tacos and waffles? Two of the best foods in the world!
Here's the recipe for you people out there who love a good taco, even if it's not the conventional type.

The Batter:
1 C. Kodiak Cakes Protein Pancake mix
1/4 C. El Pato jalapeno sauce (or any type of smooth salsa) Some Mexican style cheese (you don't need a bunch but we added a couple pinches to meet our fat macros!)
Mix together and put in waffle iron.

The Meat:
1lb. of ground turkey
1 Kraft Ranch packet
1/2 chopped onion
Pepper to taste
sauté together in a pan until meat is done and onions are tender.

The Topping:
1 or 2 handfuls of shredded lettuce per waffle
1 chopped tomato
1 packet of chunky guacamole (you can make this yourself but.... we were lazy haha)
sprinkle of cheese if desired
optional:
radishes, green onions, or pickled onions would also be delicious on this waffle.

The Layout:
Start with the waffle as your base and place a handful of lettuce and tomato as the first layer. Then the meat and onion mixture comes next, if you are going to add cheese add it now so that it melts to the gooey goodness. Top with a dollop of guacamole and dive in, literally it is amazing! You will not regret trying this recipe! You can even fold it like a taco if you choose!
