1 head of cauliflower
3 medium red potatoes or 2 sweet potatoes
1lb. ground turkey
1-2 TBS Chobani Plain Greek Yogurt
Handful of skim milk mozzarella cheese
any veggies you like, the usual suspects for me are:
1 can of corn
1 can of french cut green beans
1 cup of frozen peas (thawed)
1 cup of carrots (steamed or sautéed)
Handful of sautéed onions
But you can pretty much put any veggie in there, be creative!
The last thing is 1 packet of brown gravy
So what you are going to do is set a pot up to boil with enough water to cover the potatoes and cauliflower. Now the potatoes will take longer to cook than the cauliflower so go ahead and throw them in first and after about 5-7 minutes put the cauliflower in, use the whole head but cut it up into about 8 pieces so that it will cook faster. While the potatoes and cauliflower are cooking defrost your ground turkey and start heating the pan. At this point preheat the oven to 400 degrees. Start cooking the ground turkey and when it is just about finished add in onions and carrots if you are adding these veggies to the pie. By this point the potatoes/ cauliflower should be ready and you can drain excess water and leave the potatoes/ cauliflower in the pot. Now I am super lazy and hate having to clean an extra dish so I leave the potato/cauliflower mixture in the pot and then I add the Greek yogurt, add this 1 TBS at a time until you get the right consistency. The greek yogurt replaces butter and milk and makes the mashed "potatoes" so creamy and delicious, season with a little salt and pepper and put aside. Now in a 9x13 pan start adding all the veggies just straight from the can, on top of the veggies add the browned turkey and mix. You should have the gravy made and just pour on top of the veggie and meat mixture. Now you spread the mashed potatoes/cauliflower over the whole thing covering it completely, sprinkle the top with cheese and put in the oven for about 15 minutes. When it comes out you will have a delicious healthy shepherd's pie that everyone will be dying for.
